I recently spent a wonderful spring break in the Netherlands, and the country that I liked extremely. The food there was very tasty, but, for example, about French fries with mayonnaise on the horizon and big plump pancakes I had heard and «tuning» them.

But the mustard soup was a pleasant surprise. I tried it in a rather elegant Museum café and I liked it: unusual, but thin, juicy and elegant. The combination of flavors smoked salmon, mustard and shnit Luka was very harmonious.

At first I thought it was a dish of the so-called international cooking «new wave», but the waiter said that the soup is traditionally Dutch. It is called simply «mosterdsoep», i.e. «mustard soup.» Then I searched about this dish, the information on the Internet, and found that, in addition to versions with fish, there is a simple option, without any additives, and the option of bacon.


2 tbsp butter

2 bulbs shallot or half a medium regular onion

2 tbsp flour

1 l chicken or vegetable stock

1 tbsp smooth mustard

3 tbsp mustard «seeds»

150 g smoked salmon

120 g of crème fraîche (you can substitute heavy cream, but less sour, more neutral taste)

salt and ground black pepper to taste

a few sprigs of chives

Add the broth, stirring the soup vigorously with a whisk to avoid lumps. Increase the fire and bring the soup to a boil.
