White young zucchini — 3 kg

Ripe tomatoes — 2 kg.

Red carrots — 1 kg.

Onion — 1 kg.

Sunflower oil — 200 g

Salt — 2 tbsp

Sugar- 2 tbsp

Apple cider vinegar — 2 tbsp

1. Zucchini cut into cubes without removing the skins, large seeds removed with a spoon. Grate the carrot. Finely chop the onion.

2. Pour vegetable oil in deep squardo. Lightly fry the zucchini, add the onions and carrots. Fry the contents on medium heat, stirring frequently, for 10 minutes. Add the tomatoes, previously diced, and fry all for another ten minutes.

3.Fried products shred in a food processor or blender. Now add vinegar, salt and sugar and cook on a slow fire half an hour, stirring constantly.

4. The eggs are hot put in sterilized jars and immediately roll. Overturn jars upside down and leave them to cool down under the warm blanket.

P. S. You may choose to change the proportions of the ingredients and add other products: spices, herbs, spicy and sweet peppers, garlic. By the way, with squash caviar perfectly combine the coriander and cumin.
